Ingredients

  • 350 g cucumbers — peeled, deseeded, cut in pieces
  • 350 g Greek yoghurt — 10% fat sau plain yoghurt
  • 15 g lemon juice — optional
  • 2 garlic cloves
  • 5 sprigs fresh dill
  • 20 ml olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper

  1. Finely chop the cucumbers and place them in a bowl with salt. Let them sit for about 10 minutes to release water.
  2. Transfer the cucumbers to a fine sieve or cheesecloth and drain. Use a large spoon or your hands to squeeze out as much water as possible from the chopped cucumber, then set aside.
  3. Mince the garlic and finely chop the dill by hand or using a knife. Place them in a mixing bowl.
  4. Add the olive oil to the bowl with the garlic and dill, and mix well.
  5. Add the drained chopped cucumbers, yogurt, lemon juice, and a pinch of pepper to the bowl. Stir gently with a spoon or spatula until all ingredients are well combined.
  6. Taste the mixture and adjust the seasoning with additional salt or pepper if needed.
  7. Transfer the Tzatziki to a serving bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
