Ingredients

  • 200 g sun-dried tomatoes — preserved in oil, drained (keep the oil separately)
  • 150 g cream cheese
  • 100 g Cannellini beans — canned
  • 2 garlic cloves
  • 5 g fresh basil leaves
  • 30 ml lemon juice
  • 1 pinch fine salt
  • 2 pinch ground black pepper
  • extra virgin olive oil — for drizzling

Instructions

  1. Place the garlic and basil in a bowl and chop for 5 seconds/speed 5.
  2. Add the sun-dried tomatoes, 30g of the oil from the sun-dried tomatoes, cream cheese, beans, lemon juice, salt, and pepper, then mix for 30 seconds/speed 4.
  3. Scrape down the sides of the bowl with a spatula and blend for 20 seconds/speed 6.
  4. Transfer the mixture to a serving bowl and drizzle with olive oil.
  5. Serve immediately or cover with plastic wrap and refrigerate until ready to serve.
  6. Serve with salted crackers or fresh vegetables.
