Ingredients
- 300 g ladyfingers
- 500 g mascarpone
- 130 g sugar
- 3 egg yolks
- 450 ml freshly brewed espresso — for children, you can replace the coffee with cocoa and milk
- 20 g cocoa powder

- In a large bowl, add the egg yolks and sugar. Use an electric mixer to beat the mixture for about 6 minutes, until it becomes fluffy and doubles in volume.
- Reduce the mixer speed to medium. While mixing, gradually add the mascarpone, one spoonful at a time, until fully incorporated and the cream becomes smooth. If needed, use a spatula to fold in any remaining mascarpone, being careful not to deflate the mixture.
- Briefly dip the ladyfingers into very cold coffee, ensuring they absorb just a little liquid without breaking. Arrange half of the soaked ladyfingers on the bottom of a tray or decorative serving plate. For decoration, I used a piping bag with a decorative tip to spread the cream on top. It’s a simple method that makes the dessert look more appealing.Spread half of the mascarpone mixture over the layer of ladyfingers. Cover with the remaining coffee-soaked ladyfingers, then add the rest of the mascarpone mixture on top.
- Cover everything with plastic wrap and refrigerate for 6-8 hours.
- When ready to serve, dust the surface with cocoa powder.
