Rustic pork stew
Ingredients
- 1.5 kg pork neck — cut into pieces
- 6 onions — finely chopped
- 5 potatoes — peeled and cut into cubes
- 3 kapia peppers — cut into pieces
- 2 bell peppers — cut into pieces
- 4 tablespoons of tomato paste
- 60 ml sunflower oil
- 1 teaspoon of dried thyme
- 1 bunch of fresh parsley — chopped
- 2 L water — depending on how much liquid you want
- salt — to taste
- pepper — to taste

Cut the pork neck into medium-sized pieces. Peel and finely chop the onions.

In a large pot, heat the oil and sauté the onions for 3–4 minutes, until translucent.

Add the pork pieces and cook for 8–10 minutes, stirring constantly.

Pour in the water, then add the tomato paste, peppers, and diced potatoes. Season with thyme, salt, and pepper.

Simmer over medium heat until the meat is tender and the vegetables are cooked through. If you prefer a thicker stew, let it cook longer so the liquid reduces. If you prefer it with more sauce, remove from the heat earlier. Finally, add the chopped parsley and stir gently.
