Ingredients

  • 400 g butternut — squash, peeled and cut into 3-4 cm pieces
  • 200 g flour
  • 130 g milk
  • 2 eggs
  • 35 g sugar — opțional
  • 1/2 sachet of baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • coconut oil for frying — opțional

  1. Place the pumpkin pieces in the mixing bowl and chop for 5 seconds at speed 5.
  2. Add the sugar and sauté for 10 minutes at Varoma/reverse/spoon speed.
  3. Add the cinnamon, vanilla extract, a pinch of salt, eggs, and milk, and mix for 20 seconds at speed 1.
  4. Add the flour and baking powder, then mix for 10 seconds at speed 5.
  5. Heat a non-stick pan over medium heat and add a small amount of coconut oil.
  6. Pour a ladleful of batter into the pan and cook for 2-3 minutes on one side, or until golden brown.
  7. Flip the pancake and cook the other side for 1-2 minutes.
  8. Transfer the cooked pancakes to a plate and repeat with the remaining batter.
  9. Serve the pancakes warm with honey, nuts, or cream cheese.
