Ingredients

  • 400 g butternut — squash, peeled and cut into 3-4 cm pieces
  • 200 g flour
  • 130 g milk
  • 2 eggs
  • 1/2 sachet of baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • coconut oil for frying — optional

  1. Place the pumpkin pieces in the mixing bowl and blend for 5 seconds at speed 5 until finely chopped.
  2. Sauté the pumpkin for 10 minutes at Varoma/reverse/spoon speed.
  3. Add the cinnamon, vanilla extract, a pinch of salt, eggs, and milk, and mix for 20 seconds at speed 1 until fully combined.
  4. Add the flour and baking powder, then mix for 10 seconds at speed 5 to form a smooth batter.
  5. Use a high-quality non-stick pan so no additional oil is needed. If necessary, lightly grease the pan with a minimal amount of coconut oil using a paper towel to remove excess.
  6. Pour the batter into the pan and cook on both sides over medium-low heat (2-3 minutes per side) until golden brown. Ensure the batter is slightly thicker than traditional crepe batter. A thicker texture makes them fluffier and easier for a baby to handle.
  7. Place the cooked crepes on a plate and repeat with the remaining batter until finished.
  8. Serve the crepes warm, either plain or with baby-friendly toppings such as yogurt, fruit puree, cream cheese, or finely chopped nuts.
