Ingredients

  • 500 g pasta β€” maccheroni
  • 5 L water
  • 1 tablespoon of salt
  • 80 g basil β€” fresh
  • 80 g parmesan
  • 1 garlic clove
  • 150 ml olive oil
  • 1/2 teaspoon of salt

Pour 5 liters of water into a large pot and add 1 tablespoon of salt once the water starts boiling. Add the pasta and stir gently. Cook according to the instructions on the package (about 8–11 minutes).

Grate the parmesan using the fine side of the grater.

Crush the garlic. Place it in a mortar (or food processor), add the basil leaves and salt, and start grinding everything until you get a paste. Gradually pour in the extra virgin olive oil, mixing continuously until the sauce becomes smooth. Finally, stir in the grated Parmesan and mix until fully combined.
