- 200 g whole wheat flour
- 200 g oat flakes — quick-cooking
- 140 g butter
- 60 ml milk
- 150 g honey
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon lemon juice

Place the flour, oat flakes, sugar, salt, and baking soda in a large bowl. Mix well until the ingredients are thoroughly combined.

Add the cold, cubed butter to the bowl with the dry ingredients. Mix with your fingers or use a handheld blender until the mixture has a sandy texture.

Add the lemon juice, milk, and honey to the bowl with the flour and butter mixture. Stir with a spatula or your hands until the dough starts to come together and becomes smooth. Turn the dough out onto a generously floured work surface. Gather the dough into a ball and gently knead to fully combine. Roll out the dough with a rolling pin to a thickness of approximately ½ cm. Cut the dough using cookie cutters and place the cookies on the prepared baking trays lined with parchment paper.
