Ingredients

  • 200 g whole wheat flour
  • 200 g oat flakes — quick-cooking
  • 140 g butter
  • 60 ml milk
  • 150 g honey
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice

Preheat the oven to 200°C and line 2 baking trays (approximately 40 cm x 35 cm) with baking paper.

Place the flour, oat flakes, sugar, salt, and baking soda in a large bowl. Mix well until the ingredients are thoroughly combined.

Add the cold, cubed butter to the bowl with the dry ingredients. Mix with your fingers or use a handheld blender until the mixture has a sandy texture.

Add the lemon juice, milk, and honey to the bowl with the flour and butter mixture. Stir with a spatula or your hands until the dough starts to come together and becomes smooth. Turn the dough out onto a generously floured work surface. Gather the dough into a ball and gently knead to fully combine. Roll out the dough with a rolling pin to a thickness of approximately ½ cm. Cut the dough using cookie cutters and place the cookies on the prepared baking trays lined with parchment paper.

Bake for 12-15 minutes (200°C) until golden. Let them rest on the baking trays for 5 minutes before transferring to a wire rack to cool completely. Serve or store in an airtight container for up to 3-5 days.
