Ingredients

  • 250 g gluten-free mix white flour — contains: corn starch, rice flour, tapioca starch, sugar, psyllium fiber, salt, guar flour, yeast extract
  • 260 ml water
  • 25 g fresh yeast — crumbled
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • olive oil — for greasing
  • 250 g tomato sauce
  • 80 g cheddar — in pieces
  • 80 g gorgonzola — in pieces
  • 200 g prosciutto cotto
  • 20 g pitted olives — sliced
  • arugula

Place the water, yeast, and sugar in a bowl. Stir gently until the yeast dissolves, then let it sit for about 5 minutes until it becomes frothy. Meanwhile, line 2 large baking trays with baking paper or silicone baking mats.

Add the gluten-free flour mix and salt to the yeast mixture, then mix until a dough forms. Knead the dough by hand for about 3 minutes. The dough will be soft and sticky. Divide it between the prepared trays, and with wet hands, press it evenly into discs (approximately Ø 24 cm). Cover with oiled cling film and leave in a warm place to rest until slightly risen (approximately 2 hours).

Spread tomato sauce over rested pizza bases then bake for 10 minutes (200°C) until crust begins to crisp.

Remove the pizzas from the oven, add the toppings, then place them back in the oven for 15 minutes until cheese is melted.

Add the arugula, then cut into slices and serve immediately.
