  • 600 l milk
  • 50 g butter
  • 250 g flour
  • 4 eggs
  • 1 pinch salt

Place the butter in the bowl and melt it for 2 min./70°C/speed 2.
Add the milk, flour, eggs, and salt to the bowl and mix for 20 sec./speed 4. The batter should have the consistency of liquid cream. If it seems too thick, add a little more milk. Let the batter rest for at least 30 minutes before using it.

Lightly grease a non-stick pan with butter and place it over medium heat. Pour a small ladle of batter into the pan and tilt it to cover the entire surface with batter (the crepe should be approximately Ø 22 cm and very thin). Cook for 2-3 minutes or until the edges turn golden. Flip the crepe to the other side and cook for another minute. Transfer the crepes to a plate and cover them with a napkin to keep them warm. Repeat with the remaining batter. Serve the crepes warm. The crepes can be served with a sweet or savory filling.
