Ingredients

  • 200 g sun-dried tomatoes — preserved in oil, drained (keep the oil separately)
  • 150 g cream cheese
  • 100 g Cannellini beans — canned
  • 2 garlic cloves
  • 5 g fresh basil leaves
  • 30 ml lemon juice
  • 1 pinch fine salt
  • 2 pinch ground black pepper
  • extra virgin olive oil — for drizzling

Instructions

  1. In a blender or food processor, add the garlic and basil, and chop for approximately 6 seconds.
  2. Add the sun-dried tomatoes, 30g of the oil from the sun-dried tomatoes, cream cheese, beans, lemon juice, salt, and pepper.
  3. Blend for 25-30 seconds, until the ingredients are combined.
  4. Scrape down the sides of the bowl with a spatula.
  5. Blend for another 20 seconds, until you achieve a smooth paste.
  6. Transfer the mixture to a serving bowl and drizzle with olive oil.
  7. Serve immediately, or cover the bowl with plastic wrap and refrigerate until ready to serve.
  8. Serve with salted crackers or fresh vegetables (crudités).
