Ingredients

  • 150 g flour
  • 50 ml water, at room temperature
  • 75 g unsalted butter, very cold, cut into cubes
  • 1 teaspoon of salt
  • 250 g Brie cheese
  • 100 g Gorgonzola cheese
  • 30 g butter
  • 1 teaspoon of rosemary
  • 40 g jam — pears, apricots, or sour cherries
  • 50 g walnuts

Place the flour, butter, salt, and water in a bowl and knead until you obtain a smooth dough. Wrap it in plastic wrap and place it in the refrigerator while you prepare the filling.

Melt the butter and mix it with the rosemary. Coarsely chop the walnuts. Cut the brie and gorgonzola cheese into pieces.

  1. Roll out the dough with a rolling pin and cut it into 12 pieces. Using a silicone muffin tray, add one piece of dough to each compartment.
  2. Brush each piece of dough with the butter and rosemary mixture. Distribute the brie and gorgonzola pieces evenly in all compartments, and add the jam and walnuts.
  3. Bake for approximately 20 minutes or until golden brown at 180°C.
