Ingredients
- 800 g ground beef — or a beef-pork mix
- 230 g carrots
- 230 g celeriac
- 1 onion
- 2 garlic cloves
- 150 ml red wine
- 400 g chunky tomatoes in sauce
- 2 1/2 teaspoon of salt
- 1 1/2 teaspoon of pepper
- 1 1/2 basil — dried
- 2 bay leaves — dried
- 60 ml olive oil
Instructions
Place the carrots, celery, onion, garlic and oil into the mixing bowl, chop for 9 seconds/speed 5 and scrape down the mixture with the spatula.
Then steam for 6 minutes/120°C/speed 2 .
Add the minced meat, fold in carefully with a spatula and sauté for 6 min. 30 sec./120°C/clockwise/speed tablespoon.
Add the wine, tomatoes, tomato paste, salt, pepper, basil, and bay leaves. Mix once with a spatula. Place the simmering basket on the mixing bowl lid instead of the measuring cup to prevent splashing. Cook for 25 minutes at 100°C/clockwise/speed tablespoon . Stir again with a spatula and, if necessary, break up any larger pieces of minced meat with the spatula (test for doneness). Season the Bolognese sauce and remove the bay leaves.
Bring a large pot of water with 1 teaspoon of salt to a boil. Cook the fusilli according to the package instructions or until al dente. Drain the pasta using the Varoma dish, then transfer it to a large serving bowl and toss the pasta with the Bolognese sauce. Serve with grated parmesan on top.
