Ingredients

  • 300 g flour
  • 3 very ripe bananas
  • 100 ml coconut oil
  • 140 g plain yogurt
  • 3 tablespoons oats
  • 3 tablespoons honey
  • 10 g baking powder
  • 1 tablespoon coconut flakes
  • 100 g blueberry

  1. Grease and flour a baking pan. Preheat the oven to 160°C (320°F) with convection.

  2. In a blender or using a fork, mash the bananas. In a large bowl, combine the mashed bananas, coconut oil, yogurt, and honey, and mix with a hand mixer until smooth. Add the remaining dry ingredients (flour, baking powder, coconut flakes, and oats) and mix until incorporated. Gently fold in the blueberries with a spatula.

  3. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool before serving.
