Ingredients
- 600 g arugula β fresh
- 180 g parmesan β cut into shavings or thin slices
- 100 g pine nuts
- 10 tablespoons of olive oil
- 5 tablespoons of lemon juice
- salt β to taste
Instructions
Place the pine nuts in a non-stick pan, without oil, and toast them over low heat for 2-3 minutes, stirring constantly, until they become lightly golden. Let them cool.
Wash the arugula leaves under cold running water and dry them well using a kitchen towel or a salad spinner.
Place the arugula in a large bowl. Add the Parmesan shavings and the toasted pine nuts.
In a small bowl, mix the olive oil with the lemon juice, salt, and pepper, adjusting to taste. Pour the dressing over the salad and gently toss to evenly coat.
