- Finely chop the cucumbers and place them in a bowl with salt. Let them sit for about 10 minutes to release water.
- Transfer the cucumbers to a fine sieve or cheesecloth and drain. Use a large spoon or your hands to squeeze out as much water as possible from the chopped cucumber, then set aside.
- Mince the garlic and finely chop the dill by hand or using a knife. Place them in a mixing bowl.
- Add the olive oil to the bowl with the garlic and dill, and mix well.
- Add the drained chopped cucumbers, yogurt, lemon juice, and a pinch of pepper to the bowl. Stir gently with a spoon or spatula until all ingredients are well combined.
- Taste the mixture and adjust the seasoning with additional salt or pepper if needed.
