- Attach the mixing butterfly. Place the egg yolks and sugar in the bowl and whisk for 6 min./speed 4. Remove the mixing butterfly.
- Mix for 2 min./speed 3, gradually adding the mascarpone through the lid opening while the blade is rotating.
- Briefly dip the ladyfingers into very cold coffee, making sure they absorb a little liquid without breaking. Arrange half of the soaked ladyfingers on the bottom of a tray or a decorative serving plate. For decoration, I used a piping bag with a decorative tip to spread the cream on top. Itās a simple method that makes the dessert look more appealing. Spread half of the mascarpone mixture over the layer of ladyfingers. Cover with the remaining coffee-soaked ladyfingers, then top with the rest of the mascarpone mixture.
