The powdered milk and cocoa are sifted, mixed in a bowl, and set aside.
To enhance the flavor, toast the walnuts in a non-stick pan for 3-4 minutes. It is important to stir the walnuts regularly to prevent burning or over-toasting and to ensure even roasting. Additionally, you can check the walnuts during the process by observing any changes in color and aroma. Place the walnuts in the mixing bowl and chop for 5 sec./speed 5. Transfer to a bowl and set aside. If you want to use pistachios instead of walnuts, follow the same steps: place them in the mixing bowl and chop for 5 sec./speed 5 (do not toast them). Clean the mixing bowl.
Add the sugar and water to the mixing bowl and cook for 10 min./120ยฐC/speed 1.
Add the cubed butter and rum essence, then mix for 5 sec./speed 5.
Add the walnuts or pistachios and mix for 5 sec./speed 4.
Add the powdered milk and cocoa, then mix for 1 minute/speed 4. Scrape down the sides of the bowl with a spatula and mix again for 1 minute/speed 4.
Pour the mixture into a tray (or molds) greased with a little oil and lined with baking paper (also greased with a bit of oil). Let it cool at room temperature for a few hours (minimum 3 hours), then refrigerate for several hours (at least 3 hours).
