Dough preparation method
- Place the cornmeal, flour, baking powder, oil, water, and salt into the mixing bowl and knead for 20 sec/Speed. Transfer to a bowl, cover with plastic wrap, and set aside. Wash the mixing bowl.
Filling preparation method
- Place the water, carrot, potatoes, leek, red onion, cilantro, chicken paste concentrate, and olive oil into the mixing bowl and chop for 5 sec/Speed 5.
- Insert the steaming basket, weigh the chicken into it, and poach for 20 min/Varoma/Speed 1. Remove the steaming basket with the spatula, set aside the chicken broth for later use (see recommendation), and transfer the poached chicken to the mixing bowl. Shred the chicken for 4 sec/Reverse/Speed 4. Transfer to a bowl and set aside.
- Place the red onion in the mixing bowl and chop for 3 sec/Speed 5. Transfer to the bowl with the shredded chicken.
- Add the avocado, cream cheese, salt, and pepper to the mixing bowl and blend for 3 sec/Speed 5. Scrape down the sides of the bowl with a spatula and blend for an additional 2 sec/Speed 5. Combine with the chicken and onion mixture, transfer to an airtight container, and refrigerate until ready to use.
- Preheat the oven to 200°C (390°F). Line a large baking sheet with parchment paper.
- Divide the dough into 8 pieces and shape them into balls, then flatten them into discs (approximately 9 cm). Wet your finger and run it around the edges to smooth out any cracks. Place the discs on the prepared baking sheet and cover with a kitchen towel.
- Lightly brown the discs over medium heat in a non-stick skillet, then place them on the prepared baking sheet. Bake for 15 minutes at 200°C (390°F).
- Split the gorditas with a serrated knife, without separating them completely. Place 1 tablespoon of feta cheese and 2 tablespoons of chicken filling in each split gordita. Serve at room temperature.
