Dough preparation method

  1. Place water, yeast and sugar in mixing bowl then warm 1 min 30 sec/37°C/speed 2. Meanwhile, line 2 large baking trays with baking paper or silicone baking mats.

  1. Add the gluten-free mix flour and salt then knead Dough/3 min. The dough will be soft and sticky. Divide between prepared trays then, with wet hands, press evenly into discs (approx. Ø 24 cm). Cover with oiled cling film and leave in a warm place to rest until slightly risen (approx. 2 hours). 

Assembly

  1. Preheat oven to 200°C.
  1. Spread tomato sauce over rested pizza bases then bake for 10 minutes (200°C) until crust begins to crisp.
  1. Remove the pizzas from the oven, add the toppings, then place them back in the oven for 15 minutes until cheese is melted.

  1. Add the arugula, then cut into slices and serve immediately.
