Ingredients
  • 500 g fusilli pasta
  • 200 g tuna (in a can, in olive oil)
  • 1 onion (medium)
  • 5 garlic cloves
  • 100 g cooking cream
  • 400 g tomato sauce
  • 3 tablespoons of olive oil
  • 1 bunch of parsley
  • 1/2 teaspoon of dried basil
  • parmesan
  • salt (to taste)
  • pepper (to taste)
Preparation method
  1. Pour 5 liters of water into a large pot and bring it to a boil over high heat. When the water starts boiling, add 1 tablespoon of salt and stir.

  2. Add fusilli to the boiling water and stir well to prevent sticking.

  3. Boil the pasta according to the time indicated on the package (8-12 minutes), stirring occasionally.

  4. In the meantime, prepare the sauce. In a large saucepan, add the olive oil and sauté the onion and garlic for about 2-3 minutes over medium heat, until softened.

  5. Add the tomato sauce, tuna, basil, 1 teaspoon of salt, and a few pinches of pepper, then simmer for about 10 minutes, stirring occasionally.

  6. One minute before the maximum recommended cooking time, taste a piece of pasta to check if it is al dente.

  7. Turn off the heat and drain the pasta using a colander. Do not rinse the pasta with water, as this helps retain the starch that allows the sauce to stick better. Reserve 2-3 ladles of the pasta water in a bowl.

  8. Temper the cooking cream before adding it by mixing it with 1-2 tablespoons of the hot sauce, then pour it into the sauce. Simmer for another 6-7 minutes.

  9. If you want a thinner sauce, you can add one or two ladles of the pasta water and let it simmer for a few more minutes.

  10. After the sauce has simmered, turn off the heat and mix in the chopped parsley. Add a little grated Parmesan and stir well to melt it, enhancing the flavor and creaminess.

  11. Add the pasta to the sauce and mix well until evenly combined.
