Fusilli pasta with tuna

Ingredients
Preparation method
Pour 5 liters of water into a large pot and bring it to a boil over high heat. When the water starts boiling, add 1 tablespoon of salt and stir.
Add fusilli to the boiling water and stir well to prevent sticking.
Boil the pasta according to the time indicated on the package (8-12 minutes), stirring occasionally.
In the meantime, prepare the sauce. In a large saucepan, add the olive oil and sauté the onion and garlic for about 2-3 minutes over medium heat, until softened.
Add the tomato sauce, tuna, basil, 1 teaspoon of salt, and a few pinches of pepper, then simmer for about 10 minutes, stirring occasionally.
One minute before the maximum recommended cooking time, taste a piece of pasta to check if it is al dente.
Turn off the heat and drain the pasta using a colander. Do not rinse the pasta with water, as this helps retain the starch that allows the sauce to stick better. Reserve 2-3 ladles of the pasta water in a bowl.
Temper the cooking cream before adding it by mixing it with 1-2 tablespoons of the hot sauce, then pour it into the sauce. Simmer for another 6-7 minutes.
If you want a thinner sauce, you can add one or two ladles of the pasta water and let it simmer for a few more minutes.
After the sauce has simmered, turn off the heat and mix in the chopped parsley. Add a little grated Parmesan and stir well to melt it, enhancing the flavor and creaminess.
Add the pasta to the sauce and mix well until evenly combined.
