Place the sugar in the bowl and pulverize for 10 sec./speed 10.
Place the milk, egg yolks, sugar, and vanilla sugar in the bowl and heat for 7 min./80°C/speed 4, then mix for 5 sec./speed 5. Transfer to a serving bowl or individual dessert bowls and let cool. Wash and dry the mixing bowl thoroughly.
Insert the butterfly whisk. Add the egg whites and salt to the bowl and beat for 6 min./70°C/speed 3.5.
Divide the egg whites into 6 portions and transfer them to the Varoma tray to drain for a few minutes. Then place the egg white dumplings onto the warm or chilled vanilla sauce. Before serving, sprinkle with chopped pistachios.
