Preheat the oven to 180°C (top and bottom heat). Line a baking tray with baking paper.
Put the flour, baking powder, vanilla sugar, salt, sugar, and 250 g of chocolate (in pieces) into the mixing bowl and chop for 15 seconds/speed 9. Scrape down the sides of the bowl with a spatula.
Add 260 g of butter and the eggs, then mix for 2 minutes/speed 3. Scrape down the sides of the bowl with a spatula.
Mix again for 2 minutes/speed 3.
Fold the mixture with a spatula. Spread the chocolate mixture in the prepared baking tray and bake for 20-25 minutes at 180°C (do the toothpick test). Let it cool on a wire rack, then cut out heart shapes.
Wash the mixing bowl. Put the jam into the mixing bowl and heat for 4 minutes/100°C/speed 1. Spread the hot strawberry jam over the hearts. Place a cooling rack on a sheet of baking paper and arrange the hearts on the rack.
Rinse the mixing bowl and prepare the glaze. Put 200 g of chocolate into the mixing bowl and chop for 6 seconds/speed 8.
Add 200 g of butter and heat for 5 minutes/50°C/speed 2.
Add the milk and mix for 10 seconds/speed 4.5.
Then heat again for 2 minutes/50°C/speed 3.
Pour the glaze over the hearts and spread it quickly. Decorate the chocolate hearts with chopped freeze-dried strawberries and let the glaze set.
