Ingredients
  • 550 g broccoli florets (in pieces)
  • 900 ml vegetable broth (for the vegetable broth, you can use homemade vegetable cubes - click here)
  • 1 large potato (diced)
  • 170 g aged cheddar cheese (cubed)
  • 110 g yellow onions (cut into pieces)
  • 60 g unsalted butter (cut into pieces)
  • salt (to taste)
  • ground black pepper (to taste)
  • croutons (to serve)
Preparation method
  1. Grate the cheddar cheese using a large grater. Transfer the grated cheese to a bowl and set it aside.

  2. Finely chop the onion. In a pot, add the butter and let it melt over medium heat. Add the chopped onion to the pan and sauté for about 5 minutes, stirring occasionally, until it becomes soft and translucent.

  3. Add the diced potato and the vegetable broth to the pot. Bring to a boil, then reduce the heat to medium and let it simmer for about 15 minutes, stirring occasionally, until the potatoes are tender.

  4. Add the broccoli to the pot and continue simmering for about 15 minutes, stirring occasionally, until the broccoli is tender.

  5. Remove the pot from the heat and let it cool slightly. Add the reserved grated cheese, salt, and pepper to taste. Use an immersion blender or a countertop blender to blend the soup until smooth and creamy. Serve hot with croutons.
