Blueberry Banana Bread is a delicious and family-friendly treat. It’s made with very little honey and no sugar, making it a healthier option. Grease and flour a baking pan. Preheat the oven to 160°C (320°F) with convection.
In a blender or using a fork, mash the bananas. In a large bowl, combine the mashed bananas, coconut oil, yogurt, and honey, and mix with a hand mixer until smooth. Add the remaining dry ingredients (flour, baking powder, coconut flakes, and oats) and mix until incorporated. Gently fold in the blueberries with a spatula.
Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool before serving.
