The biscuits are crushed and set aside in a large bowl. The butter, chocolate, and sugar are melted using the bain-marie technique, stirring continuously. Milk and essences are added to them. Mix until homogeneous. The resulting chocolate sauce is poured over the biscuits and mixed until absorbed. The mixture is placed on parchment paper, rolled into a log, tightly wrapped to form a salami shape, and refrigerated until firm (ideally overnight).
**The bain-marie technique involves using hot water to heat/melt certain ingredients, chocolate in our case. The process entails placing the container with the ingredients to be melted in another larger container containing hot water. This method helps maintain a constant and uniform temperature, avoiding sudden overheating of substances sensitive to temperature.
