Ingredients
  • 2 kg pork tenderloin (approximately 1 kg each)
  • 160 g sun-dried tomatoes
  • 200 g slices of bacon
  • 200 g feta cheese
  • 6 garlic cloves
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of oregano
  • 2 tablespoons of olive oil
  • salt (to taste)
  • pepper (to taste)
Preparation method
  1. Preparing the tenderloin

    Clean the tenderloins of any silver skin, if necessary. Slice them lengthwise without cutting all the way through, so they can be opened like a "book." Cover them with plastic wrap and gently pound them with a meat mallet to achieve an even thickness.

  2. Preparing the filling

    Chop the sun-dried tomatoes into small pieces. Mix them with the crumbled feta cheese, chopped garlic, oregano, and thyme. Add a pinch of pepper to taste.

  3. Assembly

    Spread the filling evenly over the surface of the tenderloin. Roll the tenderloin tightly to ensure the filling stays inside. Wrap the roll in slices of bacon, slightly overlapping them to cover the entire surface. Tie the roll with kitchen twine or secure it with toothpicks. Repeat the process for the second tenderloin.

  4. Heat the olive oil in a large pan over medium heat. Sear the rolls on all sides until the bacon develops a light golden crust.

  5. Preheat the oven to 180°C (356°F). Transfer the rolls to a baking tray. Cover the tray with aluminum foil and bake for 30-35 minutes. Remove the foil and bake for an additional 10-15 minutes to brown the bacon.

  6. Remove the rolls from the oven and let them rest for 5-10 minutes before slicing. Serve them with a side of roasted potatoes and mustard sauce.
