Preparing the tenderloin
Clean the tenderloins of any silver skin, if necessary. Slice them lengthwise without cutting all the way through, so they can be opened like a "book." Cover them with plastic wrap and gently pound them with a meat mallet to achieve an even thickness.
Preparing the filling
